I'm off for a fun weekend with live music and friends - so naturally I thought to make a giant sized portion of delicious mexican dip to bring along! Haha - so I wanted to share this recipe with you. Tons of my friends have asked me for it over the years, and to be honest - it changes with what's in the kitchen... but the main ingredients stay the same - you know me - More Is More! Bon Appetit!
Ingredients:
1 large can of whole corn kernals
1 can of vegetarian refried beans (you can use whatever kind of refried beans you want)
1 large can of sliced olives
1 jar of medium salsa
1 can of black beans
1 package of ground beef/turkey/chicken (however much you want)
1 large brick of sharp cheddar cheese (or two bricks if you love cheese as much as I do!)
1 package of Philadelphia Cream Cheese (or two if you....)
1 bag of tortilla chips
1 package of taco seasoning
Chipotle seasoning (whatever variety you prefer: sauce, powder, etc...)
Sour Cream (optional)
You will also need:
1 disposable tin to put this all in - so think about how many of these ingredients you truly want to add and how much room you're going to need for it all (last night I used a turkey roasting pan and it was $3.00 at the supermarket)
Mix together in the pan: corn, refried beans, olives, salsa, black beans, philly cream cheese and a tad bit of chipotle seasoning.
Cook up your meat and follow the directions on the back of the taco seasoning packet - obviously add your seasoning to the meat. Let the meat cool off for a few minutes (10) and then stir it in with everything else. It's OK to leave chunks of the cream cheese :)
Top it off with grated cheddar cheese (and of course you could make it a mixture of cheeses if you wish - far be it from me to put restrictions on cheese!!!)
Cook in the oven at 450 until the entire dish is bubbling and the cheese is slightly browned.
Allow to cool for at least 20 minutes and then Wha-La! Serve with chips and sour cream! Your friends/family are gonna love you for this! And if you're traveling with it, you can always cook it when you get there to heat it all up, just make sure you remember that there's meat in it, so don't leave it out too long!
